BIO-COOL
BIO-COOL is an applied research project that merges science and culinary arts to develop high-value fermented ingredients and products from plant-based matrices and food by-products. By leveraging advanced enzymatic treatments, controlled fermentations, and functional analyses, the project enhances the processability of complex raw materials, generates bioactive compounds, and delivers innovative solutions ready for industrial application.
The project’s key differentiator lies in its development of reproducible and transferable methodologies, enabling companies to reduce uncertainty in fermentation processes, accelerate product development, and produce ingredients and beverages with proven functionalities, including prebiotics, postbiotics, and antioxidants.
From the earliest stages, BIO-COOL incorporates critical industrial considerations such as stability, preservation, scalability, and standardization, including the use of inactivation technologies to create safer and more robust postbiotics. This approach helps bring innovative products to market with longer shelf life and greater consistency.
Through this project, GOe Tech Center is positioned as a strategic partner in applied culinary biotechnology and the development of functional foods.
