ERROBIRA is a research project exploring how new ingredients can be integrated into gastronomic cultures through the combined use of digital tools, sensory analysis, and participatory methodologies. By studying traditional recipes and their inherent variability, the project develops innovative approaches that enable the introduction of novel ingredients without compromising the culinary identity of a given territory.

Its key distinguishing strength lies in the integration of three complementary perspectives: computational recipe analysis, which systematises and reveals the structure and variation of recipes; sensory substitution strategies, which ensure the functional and organoleptic coherence of ingredient replacements; and citizen participation, which provides cultural insight and validates the acceptance of proposed innovations.

Through the development of algorithms, digital interfaces, and co-creation formats such as living labs, showcookings, and tasting sessions, ERROBIRA produces replicable methodologies that support the food and gastronomy industry in reducing innovation uncertainty, improving consumer acceptance, and designing products that remain aligned with local culinary traditions.

The project positions GOe Tech Center as a leading reference at the intersection of gastronomy, digital innovation, and consumer science, contributing to the development of culturally coherent and socially accepted solutions within the food domain.
