Testing the usability of Ikore

This research project focuses on testing the usability, functionality, and cooking quality of Fagor Ikore Modular’s new oven range, which is controlled via a 100% digital interface and is configurable. Our facilities served as the main testing ecosystem for this project.

On one hand, it was implemented in the real context of LABe Digital Gastronomy Lab, our open innovation lab designed to drive the digital transformation of gastronomy. The kitchen team analyzed daily the usability and technological advances that Fagor Professional integrated into its new oven prototype. In addition to the LABe Restaurant team, we attracted the attention of 30 chefs from various profiles within the industry (collective catering, independent restaurants, organized catering, etc.) who participated in this research.

On the other hand, in BCC Innovation’s laboratories, our team of technicians, alongside the chefs, conducted a thorough physical-chemical analysis to scientifically verify the impact of the technologies incorporated into the oven on the quality of food cooking.

Through this strategic testing, we determined key factors prior to the product’s launch:

  • Oven usage perception
  • Oven evaluation
  • Cooking quality

Thanks to the combination of scientific knowledge with culinary expertise, along with the motivation and involvement of the entire team, Fagor was able to achieve the new generation of IKORE ovens.
